OAT BRAN WONDER

1 package yeast
1 cup rolled oats (quick cook)
1 1/2 Better for Bread Flour
2 1/4 cups oat bran
1 3/4 whole wheat flour
4 Tablespoons gluten
2 Tablespoons wheat germ
1 teaspoon salt (optional)
2 Tablespoons safflower (or vegetable) oil
3 Tablespoons honey
2 egg whites
2 cups plus 2 Tablespoons very warm water

3-4 lb. loaf Add ingredients except liquid in order, add 1 cup plus 2 Tablespoons ov very warm water . Select white bread and start. Leave lip open. After a minutes as the machine mixes the dough, add the remaining 1 cup of very warm water .

hint: measure the oil first, then the honey rolls off the teaspoon.
