OAT BRAN PRUNE BREAD

1 package yeast
1 cups rolled oats (quick cook)
1 1/2 cups Better for Bread flour
2 1/4 cups oat bran
1 3/4 cups whole wheat flour
4 Tablespoons gluten
2 Tablespoons wheat germ
1 teaspoon salt (optional)
2 Tablespoons safflower (or any vegetable) oil
2 Tablespoons honey
2 egg whites
1 cups pitted prunes snipped into halves
1/8 teaspoon nutmeg (optional)
2 cups plus 2 Tablespoons warm water

3-4 lb loaf add all but liquid, add 1 cups plus 2 Tablespoons warm water Select white bread and start. leave lip open, after a minuteadd remaining 1 cups warm water slowly

 

try adding chopped nuts, fresh or dried fruit
