OAT BRAN CARROT BREAD

1 package yeast
1 cups rolled oats (quick cook)
1 1/2 cups Better for Bread flour
2 1/4 cups oat bran
1 3/4 whole wheat flour
4 Tablespoons gluten
2 Tablespoons wheat germ
1 teaspoon salt (optional)
2 Tablespoons safflower (or any vegetable) oil
3Tablespoons honey
2 egg whites
1 1/2 freshly grated carrots (3-4 whole carrots)
2 cups plus 2 Tablespoons warm water

3-4 lb loaf add all but liquid add 1 cup plus 2 Tablespoons warm water Select white bread and start. leave lid open, after a minute add remaining liquid
