PINEAPPLE-CARROT BARS

 HALF RECIPE FULL RECIPE  
 2 tbsp. + 2 tsp.   1/3 c.  honey
 1 tbsp. 2 tbsp.  safflower oil
 1/2 tsp.  1 tsp.  vanilla
 1  2  egg whites
 1/2 cup  1 cup  whole wheat flour
 1/2 tsp.  1 tsp.  baking powder
 1/2 tsp.  1 tsp.  baking soda
 1/2 tsp.  1 tsp.  cinnamon
 1/2 cup  1 cup   finely shredded carrots
 1/3 cup  2/3 cup  raisins
 1 tbsp. +1 1/2 tsp.  3 tbsp. skim milk  skim milk
 4 oz.  8 oz.  can crushed pineapple, drained

Stir honey, oil, vanilla and egg whites well; set aside. Combine flour, baking powder, soda, and cinnamon, stir well; add to first mixture. Add carrots, raisins, milk, and pineapple; stir well. Spread in (half recipe 8 X 8 ) 9x13x2 inch pan coated with cooking spray. Sprinkle with 1 teaspoon powdered sugar, if desired. Bake at 350 degrees about 25 minutes. Yield: (half recipe 1 dozen) 2 dozen 2 x 2 1/2 inch bars. About 61 calories each.
