1 QUART WATER
2-1/2 CUPS SUGAR
1 SPLIT VANILLA BEAN
4 PEELED PEARS
4 OUNCES DARK SWEET CHOCOLATE
1/2 CUP WHIPPING CREAM

COMBINE WATER, SUGAR &VANILLA BEAN IN A LARGE SAUCEPAN & BRING TO BOIL. ADD PEARS, REDUCE HEAT & COOK GENTLY UNTIL TENDER, ABOUT 30 MIN. REFRIGERATE PEARS IN SYRUP FOR 24 HRS. REMOVE VANILLA BEAN. MELT CHOCOLATE OVER LOW HEAT. SCRAPE VANILLA BEAN PULP INTO CHOCOLATE. ADD CREAM & BRING TO BOIL, STIRRING CONSTANTLY. REMOVE FROM HEAT. TO SERVE, PLACE SCOOP OF FRENCH VANILLA ICE CREAM IN DISH. PLACE PEAR ALONG SIDE IT. SPOON CHOCOLATE SAUCE OVER TOP.
