Large Apple Turnovers - Julia Childs

1-1/2 CUPS FLOUR
1/2 CUP CAKE FLOUR
1-1/2 STICKS CHILLED, UNSALTED
BUTTER
2 TABLESPOONS SHORTENING
2 TABLESPOONS SUGAR
1/4 TEASPOON SALT
1/2 CUP, MORE OR LESS, ICE WATER
4-5 LARGE BAKING APPLES
3 TABLESPOONS (OR MORE) SUGAR
1/2 TEASPOON CINNAMON
1/2 LEMON, RIND AND JUICE
1 TABLESPOON MELTED BUTTER
EGG GLAZE-1 EGG BEATEN WITH 1 TEASPOON WATER

CRUMBLE FIRST 6 INGREDIENTS IN FOOD PROCESSOR. ADD ENOUGH ICE WATER TO HOLD TOGETHER. CHILL 1 HR. - 3 DAYS. MAKE APPLE FILLING AND LET STAND 20 MIN. ROLL DOUGH 20X10 IN. RECTANGLE. PUT ON BUTTERED PASTRY SHEET. PUT FILLING ON HALF, DRIZZLE WITH MELTED BUTTER, PAINT WATER AROUND BORDER, FOLD HALVES TOGETHER AND PRESS TO SEAL. PAINT WITH EGG WASH. BAKE 400 DEG. 35-40 MIIN. AFTER 20 MIN., CHECK TO SEE IF TOO BROWN, MAY HAVE TO COVER WITH FOIL.
