Vietnamese ground chicken lettuce wraps
Wraps:
1 ½ T peanut oil
1 onion finely chopped
1 T minced ginger
1 clove garlic minced
1 lb ground chicken
1 carrot grated
4 scallions thinly sliced
1 8 oz. can water chestnuts finely chopped
5 mushrooms finely chopped
2 T. fish sauce
1 T soy sauce
1 t sesame oil
½ t cayenne pepper
½ c cooked bean thread noodles
¼ c dry roasted peanuts chopped
¼ cup cilantro chopped

Spicy sauce:
5 T soy sauce
3 T Thai hot sauce
5 T balsamic vinegar
2 t sugar

In skillet with oil, stir fry onion, ginger and garlic for 3 min. Add chicken and stir fry 5 min. more until cooked through. Add carrots, scallions and chestnuts and cook 3 min. more. Add other ingredients and mix well. Spoon into lettuce leaves and serve with sauce.
