Stuffed Rock Cornish Hens

6 Rock Cornish hens (1 pound each)
1/8 teaspoon pepper
1/2 cup margarine
1 tablespoon paprika
1/2 cup diced onion
1 egg, slightly beaten
1 cup diced mushrooms
1 can Manischewitz Condensed Clear Chicken Soup, margarine
6 Manischewitz Matzos, any variety finely broken
3/4 teaspoon salt

Sauté onion and mushrooms in the fat until tender but not browned. Add broken Manischewitz Matzos and toast lightly. Combine salt, pepper, paprika, egg and Manischewitz Condensed Clear Chicken Soup. Add to matzo mixture. Lightly fill body cavities with stuffing. Close openings with skewers. Place on a rack in a large roasting pan, breast side up. Brush liberally with margarine. Roast uncovered in a hot oven (450º), brushing occasionally with additional fat, for one hour until tender. Serves 6.
