Walla Walla Relish
3 (1 pound) cups sliced Walla Walla or other sweet onions
1 cup diced seeded tomato
2 tablespoons sliced fresh basil
1 ½ tablespoons chopped seeded jalopeno pepper
2 t olive oil
2 t white wine vinegar
little salt and pepper
Arrange onion slices in a single layer on oiled jelly roll pan. Bake 400 deg. for 15 min. Turn over and bake 25 min. longer. Cool, and coarsely chop.

Combine onion with remaining ingredients. Let stand at room temp. 20 min. before serving. Serve on top of salmon.

Combine for dressing:
3 T raspberry flavored vinegar
2 T apple juice
1 T olive oil
1 T honey
1/8 t salt and pepper
Stri well with whisk.
Combine for salad:
2 c torn spinach
2 c torn curly endive
2 c (about 2 medium) cubed pears
1 cup raspberries.
