Here is a very simple but taste dinner. There is very little preparation time. This recipe can vary from a 2 person half of chicken to a 4 person whole chicken. Left over sauce is great the next day as a sauce for a light white fish.

Chicken with Orange sauce

Either a half or whole chicken
Wash chicken and put in an oven pan on a rack
Pour some orange juice on the chicken
Bake chicken for 1½ hours @ 350 degrees

While chicken is in oven, mix together
1 cup of orange juice
¼ cup of brown sugar
1 teaspoon of corn starch
1 tablespoon of orange liquor like Grand Mariner (optional)
Bring to a boil for about 2 minutes and cool

Put a little of the sauce on the chicken the last 5 minutes of cooking, pour the rest into a small cup or bowl.

When serving the chicken, spoon a little sauce over the chicken.

For a good side disk,
Orange Rice
Take 1 part of rice to 2 part orange juice and 1 part of water
Bring to a boil, cover and simmer for 15 minutes.
