Tolly's Cinnamon Rolls - Bon Appetit

3/4 CUP WARM WATER
2 ENVELOPES YEAST
1-2/3 CUP WARM MILK
1/4 CUP SOLID VEGETABLE SHORTENING
1/4 CUP SUGAR
1 TABLESPOON SALT
6-1/2 CUPS FLOUR-APPRX.
1/4 CUP BUTTER-ROOM TEMP.
3/4 CUP FIRMLY PACKED BROWN SUGAR
3/4 CUP CHOPPED WALNUTS OR PECANS
1/3 CUP RAISINS
1-1/2 TEASPOON CINNAMON
ICING-TOO SWEET
2 CUPS POWDERED SUGAR
1/4 CUP FRESH ORANGE JUICE
1/4 CUP SOFT BUTTER
1/2 TEASPOON VANILLA
1/2 TEASPOON ALMOND EXTRACT

STIR YEAST INTO WATER. BLEND IN MILK, SHORTENING, SUGAR & SALT. ADD HALF THE FLOUR AND BEAT UNTIL SMOOTH. ADD ENOGH FLOUR TO FORM A WORKABLE DOUGH. KNEAD 5 MIN. TRANSFER TO GREASED BOWL. RISE 1 HR. GREASE 2 LARGE BAKING SHEETS. ROLL 12X18 IN. SPREAD WITH BUTTER. SPRINKLE WITH BROWN SUGAR, NUTS, RAISINS, & CINNAMON. ROLL UP. CUT IN 16 SLICES. PLACE ON BAKING SHEETS. RISE 40 MIN. BAKE 350 DEG. 25-30 MIN. COMBINE GLAZE INGR. & BEAT WITH ELECTRIC MIXER UNTIL COMBINED. ADD MORE JUICE, IF NEEDED. FROST ROLLS WHILE STILL HOT.
