Vidalia Onion Tart
2 large Vidalia Onions peeled, sliced, and separated into rings
1 1/2 teaspoons olive oil
2 shallots peeled and minced
2 tablespoons minced fresh chives
1 cup skim milk
1/4 cup egg substitute
2 egg whites
1 teaspoon sage
1. Heat olive oil in a 10 inch cast iron skillet and add the onions, shallots, and chives. Cook slowly over low heat until onions are soft, (approximately 3 minutes).
2. In a bowl whisk the milk, eggs, egg whites and sage together,
3. Pour the egg mixture over the onions and bake until set, (approximately 30 minutes). Slice into 4 wedges and serve warm.
