Vidalia Sweet Onion and Potato Casserole
2 lbs. frozen hash brown potatoes
1 cup sour cream
1 cup grated mild cheese
1/2 cup finely chopped Vidalia Sweet Onions
1/2 cup melted butter
1 can cream of mushroom soup
salt & pepper to taste
Thaw potatoes thoroughly and crumble; combine other ingredients. Place in a 13 X 9 inch casserole dish.
Topping: 1/4 cup melted butter, 2 cups mashed corn flakes. Combine and sprinkle over casserole. Bake 45 minutes at 375 degrees. Serves 8.
