Congealed Vidalia Onion Salad
2 (3 oz.) packages lemon-flavored gelatin
1 large Vidalia Onion, diced
1 cup chopped fresh broccoli (do not use stems)
2/3 cup diced celery
1/2 cup grated carrot
2 cups cottage cheese
Dissolve gelatin in 2 cups of boiling water. Set aside to cool slightly. Combine Vidalia Onion, broccoli, celery and carrots. When gelatin has cooled, add Vidalia-vegetable mixture. Stir to mix. Add cottage cheese. Mix ingredients thoroughly. Pour into a 9"x 9" glass dish. Refrigerate for 4 hours or overnight. Serves 6-8.
