Zucchini Oven Chips Cooking Light Aug. 2005


¼ c. dry bread crumbs
¼ c. grated parmesan cheese ( if you don't have, I sprinkled chedder over chips last 3 minutes of cooking)
¼ t. seasoned salt
¼ t. garlic powder
¼ t. pepper
2 T. fat free milk
2 ½ c. sliced zucchini (¼ in. thick)

Variation --

I brushed some with garlic oil (or butter)

I sprinkled some with Emeril's seasoning


Cooking spray
1. Preheat oven to 425°
2. Combine 1st 5 ingredients in a medium bowl stirring with a whisk.
3. Dip zucchini slices in milk, dredge in bread crumbs.
4. Place on oven-proof wire rack coated with cooking spray and place rack on a baking sheet.
5. Bake for 30 min. or until browned.
