Cauliflower Fritters
Boil a small cauliflower in salted water until tender (or use a package of frozen). Drain and mash wel. Mix 1/2 cup of matzah meal, two beaten eggs and 1 Tbsp. of oil, salt & pepper. Add to mashed cauliflower and beat very well. Heat oil in frying pan, drop batter by tablespoons and fry until brown on both sides. Penina W. Freedenberg, Rockville, MD
