Zesty Zucchini and Onions

Makes: 8 servings, 1 cup each
3 Tbsp. vegetable oil
2 cloves garlic, minced
4 medium zucchini, cut into 1-inch chunks (about 4 cups)
2 large onions, cut into 1/4-inch-thick slices, separated into
rings
1 jar (15 oz.) marinara sauce
1-1/2 cups water
1/4 tsp. black pepper
HEAT oil in large skillet on medium-high heat. Add garlic; cook
and stir 2 minutes or until tender.
ADD zucchini and onions; cook 8 minutes or until tender, stirring
frequently.
STIR in marinara sauce, water and pepper; mix well. Simmer 25
minutes, stirring occasionally.
