ZUCCHINI SAUTE
1 Tbsp.olive oil
4 small zucchini, thinly bias-sliced (4 cups)
1 Tbsp. fresh snipped basil, oregano, or rosemary
Salt
Pepper
Pour olive oil into a large skillet. (Add more olive oil as necessary during cooking.) Preheat over medium-high heat. Cook and stir zucchini in hot oil for 3 to 4 minutes or till crisp-tender. Transfer to a serving dish. Toss in fresh herb and season to taste with salt and pepper. Makes 4 to 6 servings.
