Sweet Caramelized Vidalia Apple Compote
3 tablespoons butter, divided
5 cups sliced Vidalia onions (about 1-1/4 pounds)
2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon ground black pepper
3-1/2 cups peeled, sliced tart green apples
In a large skillet heat 2 tablespoons butter until hot. Add Vidalia
onions; cook, stirring frequently, over medium-high heat until
tender, 10 to 15 minutes. Add sugar, salt and black pepper; cook
until golden brown, about 10 minutes. Meanwhile, in another large
skillet heat remaining 1 tablespoon butter until hot. Add apples;
cook, stirring occasionally, until tender, about 10 minutes
Stir into onion mixture. Serve warm with roasted or grilled pork
or chicken.
